Todays video join Kyle and I for a tasty weekly meal prep! I’m vegetarian so both meals are vegetarian friendly but you could easily add mead if you’re not veggie! We each choose a different meal and spent about an hour cooking and preparing our healthy meals for the week. After everything is ready we put it into containers so it’s easy to grab and go. I hope you enjoy this vegetarian meal prep video, and let me know which meal you would prefer!

♦ RECIPES

LENTIL SOUP
1 White Onion
2 Cups of Carrots
2 Cups of Celery
2 Cups of Butternut Squash
1 Cup Split Red Lentils
1 Cup Split Peas
1 Container Veggie Broth
Garlic
4 Cups of Water
Sprinkle of Chili Flakes
* cook in crockpot on low for 7-8 hours

QUINOA BOWL
4 Cups of Cooked Quinoa
1 Sweet Potato
1/2 Cup of Onion
2 Avocados
1 Hot Pepper
1 Can of Red Kidney Beans
1 Can of Corn
Lime Juice, Salt + Pepper
Dill Dressing on Top

  1. Love both…i do couscous with asparagus, spring onion, mushrooms, bell pepper and tomato..with some mint leaves..taste amazing.thts my normal lunch every week.very quick to cook.

  2. It seems to be so easy and so delicious !! I'm gonna try it asap ! Personally, I'm currently in my transition period, into vegetarianism/veganism. I'd love to have your tips to acheve it as good as possible, without deficiency .. Thank you Erin for your recipes !! Your videos are absolutely awesome !!   6. Wooow that soup looks so good!! Do you guys find you ever get bored of eating the same meal all week? I would love to meal prep but I'm just too lazy! Haha
