Meal Prep for Weight Loss in 2018

Committing to a New Year’s resolution to get fit or lose weight can be a daunting task, but it doesn’t have to be! Check out my 4 day meal prep (I supplement what I’ve made by cooking fresh grains like steel cut oats, rice, and quinoa, freshly steamed veggies, plus protein shakes to stretch this out to one full week of meals and snacks) to make healthy eating an easy habit and not a complicated chore.

Meal Prepping is also a great time saver!

Veggie Lentil Soup

1/4 of an Onion
4 Cloves Garlic
2 Carrots
String Beans
1 Cup Red Lentils
2 Tsp Cumin
1 Tsp Curry Powder,
1/2 Tsp Thyme, Garlic Salt, Onion Powder each
3-4 Large Bay Leaves
4 Cups Vegetable Broth
2 Cups Water
1/2 Lemon
Salt, Pepper, & Red Pepper Flakes to Taste

Crustless Quiche

6 Eggs
1 Cup Egg Whites
1/2 Cup Low Fat or No Fat Sour Cream/Cottage Cheese
1 Tsp Garlic Salt
As Much Kale, Broccoli, & Any Other Greens You Can Get Your Hands On
*Optional 1/2 Cup Shredded Low/No Fat Cheese
Tomatoes, Onions, Peppers

Peanutbutter Protein Balls

2/3 Cup All Natural Peanut Butter
1 Cup Old Fashioned Oats
1 Scoop Vanilla Whey Protein Powder
1/2 Cup Ground Flax (I usually end up adding a bit more)
2 Tbsp Walden Farms 0 Cal Maple Walnut Syrup
*Optional Stevia
Dark Chocolate Chips
Toasted Coconut Flakes

“Honey” Dijon Salmon Sauce

1/3 Cup Dijon Mustard
1/4 Cup Walden Farms 0 Cal Maple Walnut Syrup
4 Cloves Garlic, minced
2 Tbsp Lemon Juice
1/4 Tsp Smoked Paprika & Kosher Salt each
1/8 Tsp Pepper

The BEST Way To Use Thanksgiving Leftovers

With Thanksgiving just days away, we wanted to share the BEST way to use Thanksgiving leftovers! This recipe has been a family favorite for generations now and we make it all year long! It works great with leftover turkey, chicken, and stuffing! It is also a great recipe to make ahead and freeze for a quick dinner. You can make it for guests, potlucks, parties and holidays! CC’s Creamy Chicken Casserole:
Stuffing mix (can use leftovers)
2-4 chicken breasts or turkey (leftovers)
1 cup chicken broth
1/2 cup flour
2 sticks of butter
2 cans evaporated milk
1/2 cup onion
1 sleeve ritz crackers
1 & 1/2 t. salt
1/8 t. pepper
1/8 t. poultry seasoning
1/8 t. garlic powder
1/4 t. onion powder
1 & 1/2 t. chicken soup base (optional)

Either prepare stuffing mix or use leftovers and place a thin layer in a 9×13 casserole dish. Then add a layer of chopped chicken or turkey. In a large sauté pan, start melting 1 & 1/2 sticks of butter. Add onions and sauté till translucent. Add seasonings, Salt, pepper, poultry seasoning, onion powder, garlic powder. Remove the pan from the heat and whisk in flour to combine. Return pan to heat and let simmer. Add chicken broth and wait till it thickens. Whisk in each can of evaporated milk, one at a time. Add soup base. Let sauce simmer for a few minutes to thicken. Pour sauce over top of chicken and spread evenly to all sides of the pan. In a ziplock baggy, crush ritz crackers with a rolling pin. Melt 1/2 stick of butter and stir in crackers until they are all coated. Sprinkle the crackers evenly over top of sauce. Bake at 375 for 30 minutes or 45-60 minutes if frozen. Enjoy!
