Ina’s Garlic and Herb Roasted Shrimp | Food Network



Ina’s roasted shrimp makes a quick and easy summer dinner that’ll make your guests go WILD.

Ingredients

1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Directions

Preheat the oven to 400 degrees.

Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.

Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

VEGAN GINGER BEEF | Recipe by Mary’s Test Kitchen



This vegan ginger beef recipe uses tender homemade beefy beefless seitan, coated in a crispy fried batter, and dressed with sweet ginger beef sauce. It’s super delicious and just as good, or better than Chinese take-out ginger beef (AKA ginger fried beef or deep fried shredded beef in chili sauce).

Ginger beef is a Chinese Canadian invention. According to Wikipedia, it was developed for the local palate in the 1970’s by chef George Wong at the Silver Inn in Calgary, Alberta. It’s made from strips of beef, battered in a mixture of egg and cornstarch and deep fried before being covered in a very sweet and somewhat tangy sauce. It’s on practically every Chinese take-out menu here in Calgary, even the vegetarian Chinese restaurant menus. By popular request, I developed this vegan ginger beef recipe for anyone and everyone who craves the taste and crunch of ginger beef without the meat and eggs.

My favorite kitchen equipment:

Ingredients:
900g (2 pounds) ground meat
3 large eggplants
3 medium onions
4 garlic cloves
1/4 bunch parsley
240g (8.5oz) tomato sauce
1/4 (35g) cup pine nuts
3 eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cumin
Directions:
1. Slice the eggplant lengthwise. Sprinkle with salt and set aside.
2. Meanwhile finely chop the onions and the parsley. Mince garlic cloves.
3. In a large skillet over medium-high heat sauté the onions for 4-5 minutes. Add minced garlic and sauté 2-3 minutes more. Add the meat and cook until starts to brown. Add the spices and stir. Pour tomato sauce and cook, stirring occasionally, until thickens. Add chopped parsley and pine nuts. Stir and turn heat off.
4. Wash eggplants and dry with a kitchen towel/paper. Dip sliced eggplants in beaten egg with salt and pepper. fry each slice of the eggplants until golden on both sides. Transfer to kitchen paper to get rid of excess oil.
5. Preheat oven to 200C (395F).
6. In a 2 baking dishes (or disposable tray) assemble the cake. Arrange the eggplants as shown in the video. Place half of the meat mixture in each of the dishes and close with the eggplants. Brush with beaten egg (optional: sprinkle with parmesan).
7. Bake for 20 minutes.

1 CAN OF CHICKPEAS ( 2 CUPS ANY BRAND)
1/2 CUP COOKED QUINOA 2SP
1/3 CUP OAT FLOUR 3SP
VEGGIES: RED, YELLOW, ORANGE PEPPERS, SHREDDED CARROTS, 5 MUSHROOMS, GREEN AND RED ONIONS ( 3/4 CUP COOKED) YOU CAN USE ANY VEGGIE
1 TSP FRANK’S HOT SAUCE OR MORE
1 TSP GARLIC AND ONION POWDER OR MORE ( YOU CAN USE FRESH GARLIC TOO)
1 TSP OR MORE ROASTED. RED PEPPER SEASONING
PINCH OF SALT AND PEPPER
1 TSP OR A FEW SPRINKLES OF LIQUID SMOKE ( OPTIONAL)
1 TBS OF CHIPOLTE SAUCE OR SEASONING
APPROXIMATELY 1 TO 2 TBS WATER

DIRECTIONS:

CHOP ALL VEGGIES SET ASIDE

BOIL QUINOA ( I MAKE 1 CUP TO 1.5 CUPS WATER. ALLOW TO BOIL. PUT LID ON AND SIMMER FOR 15 MINUTES)
ALLOW TO COOL

IN A SPRAYED SKILLET ADD ONIONS THEN REST OF VEGGIES UNTIL LIGHTLY BROWNED. ALLOW.TO COOL

IN A FOOD PROCESSOR ADD QUINOA, CHICKPEAS, OAT FLOUR AND ALL THE SEASONINGS!!!
ADD A BIT OF WATER TO BLEND

REMOVE AND PUT IN A BOWL
FOLD IN VEGGIES

FORM INTO LARGE OR SMALL PATTIES. I LIKE TO MAKE THEM THIN IN ORDER TO COOK WELL!.

REHEAT SKILLET AND SPRAY WELL
ADD.YOUR FAVORITE SUGAR FREE BBQ SAUCE IF YOU WANT

GRILL OR BBQ APPROXIMATELY 8 MINUTES ON EACH SIDE.ON A MEDIUM HEAT OR…

YOU CAN BAKE AT 350 FOR 30 MINUTES BUT CHECK YOUR OVEN. YOU MIGHT WANT THEM CRISPER!!

EAT RIGHT AWAY OR KEEP IN FRIDGE OR FREEZER!!
YOU CAN MAKE AHEAD OF TIME TOO!!

EAT WITH YOU FAVORITE SAUCE, BUN, LETTUCE WRAP, VEGGIES ON TOP AND CONDIMENTS!!!!💗😘

Hiding Vegetables in a Shepherd’s Pie Recipe | How We Eat



Vicky (Mummy Bubble) loves making her two girls shepherd’s pie… But she also loves to hide lots of vegetables in it – so the girls don’t notice! Her family recipe for shepherd’s pie quickly became the hidden veg shepherd’s pie!

Recipe

– Fry 500g lamb mince in a wide-based saucepan until brown.

– Add diced or grated carrot and onion, fry for a couple of minutes.

– Add one tin chopped tomatoes or jar of passata and a beef stock cube.

– Add a dash of Worcestershire sauce. Bring to a simmer.

– Meanwhile add diced potato chunks to boiling water in a pan. Simmer for around 15 to 20 minutes until soft.

– Mash potato and add milk and generous knob of butter.

– Put pie mixture into a oven-proof dish and layer the mash on top.

– Bake in the oven at 170C for around 25 minutes until mash begins to turn golden.

– Cool for five minutes and then serve with peas.
