How-to make a Vegetarian Shepherd’s Pie

How-to make vegetarian Shepherd’s pie. This is a simple vegetarian recipe you can make for dinner.

4 medium potatoes, peeled and cubed
1/2 cup of milk
1/4 cup of the cheese of your choice, grated
salt and pepper, to taste
extra virgin olive oil
1 onion, chopped
1 clove of garlic, minced
1 stick of celery, chopped
1 leek, chopped
1 carrot, chopped
1 cup of cauliflower florets
1 can of beans, drained and rinsed
1 tsp of Italian seasoning

1. Preheat the oven to 350 F.
2. Cook the potatoes in boiling water for 15 minutes or until tender, and drain.
3. Pour the milk over the potatoes and mash until smooth.
4. Stir in the grated cheese of your choice and season to taste.
5. Heat extra virgin olive oil in a pan and add the onion, garlic, celery, leek, carrot and cauliflower florets.
6. Saute the veggies gently for 10 minutes. If the pan dries out too much, add a little water from the boiling potatoes rather than more oil.
7. Next, add the beans and Italian seasoning.
8. Spoon the beans and vegetable mixture into an ovenproof dish and top with the cheesy potato mash.
9. Sprinkle more grated cheese over the top.
10. Bake for 20 minutes until the topping is golden brown.
