Want to put together a ‘different’ dessert this fall? Try this upside down pumpkin pie!

I forgot to give my opinion on this at the end. I personally didn’t think there was anything special about this. It was good, but some people just rave about it! Scott went to hang with his buddies, so I had him take some for them. They all loved it. Go figure!!! In fact, one person kept digging at the crust saying, “what is this? it’s good!” lol

Would I make it again? I would, however, I would use someone’s suggestion of using a spice cake mix instead, and I would definitely bump up the flavor with more pumpkin pie spices like cloves and nutmeg, etc. As I have always said in the past, I try a recipe “as is” and then if it is worthy, I will fuss with it and make it better (in my opinion).

1 box yellow cake mix (consider using a spice cake mix instead)
1 can pumpkin (15 oz.)
1 can evaporated milk (12 oz.)
3 large eggs, beaten
1 cup sugar
2 tsp. pumpkin pie spice
1⁄2 teaspoon salt
1 cup chopped pecans
2 sticks butter, melted

Grease bottom of 9×13 pan, placing a piece of parchment or wax paper on the bottom of the pan.
Combine pumpkin, milk, eggs, sugar, cinnamon, and salt in large bowl.
Mix well, pour into pan, and sprinkle cake mix evenly over pumpkin mixture.
Top with pecans, drizzle melted butter over top, and bake 350 degrees for 50-55 minutes or until golden brown.
When cool, loosen pumpkin crunch from side of pan with a knife.
Invert pan onto platter (the top becomes the crust). Top with whipped cream.

Dukan Diet Pumpkin Pie



Diet pumpkin pie, contains no fat and no sugar, but is still delicious. Leftovers are a great snack or lunch containing a vegetable & protein.

Pumpkin Pie Recipe

8 oz. softened fat free cream cheese (optional)
1 can of pumpkin
1/4 tsp sea salt
3 eggs
Sweetener
1 cup of evaporated fat free milk or almond milk
1 Tablespoon vanilla
pumpkin pie spice to taste
1 tsp. cinnamon

Beat cream cheese add pumpkin, eggs, milk, and all spices bake at 375 for approx 40 minutes (I check it with a knife) You can bake it in small ramekins. I serve it with Foam (from whole foods).

Chocolate-Pecan Pie | Thanksgiving Recipes | Everyday Food with Sarah Carey



The first thing I do on Thanksgiving morning is to wake up, pour myself a cup of coffee, and bake a pie. I do this first because pie is my favorite thing to make (and eat!), but also because it warms up my oven and keeps it available for the turkey, side dishes, and all the other delicious things that will be going in and out of the oven all day.

Pecan pie is a beloved Southern dessert and a Thanksgiving fave (no offense, pumpkin!), but we found a way to make it even better — add chocolate, of course. To make this pie, you’ll need semisweet chocolate, eggs, corn syrup, sugar, vanilla extract, salt, pecans, and the pie crust we made together yesterday: . The result is ooey-gooey and utterly irresistible. Why not start with dessert?

Recipe Ingredients:
4 ounces semisweet chocolate, finely chopped
4 large eggs, lightly beaten
1 1/2 cups light corn syrup
1/2 cup sugar
1 teaspoon pure vanilla extract
1/2 teaspoon salt
1 recipe Basic Pie Crust, rolled and fit into a 9-inch pie plate
1 cup pecans

Low Calorie Pumpkin Pie Cheesecake- YUM!



This is my recipe for a low calorie, low fat and low sugar double layer pumpkin pie cheesecake! It is really yummy (and honestly came out much better than expected)!!

Serves 8

Per slice:

WITH pecans: 173 cals | 12 carbs | 11 fat | 7 protein | 1 fiber | 6 sugar

WITHOUT pecans: 148 cals | 11 carbs | 8 fat | 7 protein | 1 fiber | 5 sugar
