MAPLE BACON CHEESECAKE
printable recipe
Crust
1 1/4 C graham crackers
1 Tbsp sugar
1/2 tsp cinnamon
6 Tbsp unsalted butter, melted
Cheesecake
2 lbs Cream cheese softened
1 C sugar
1 tsp vanilla
1/2 C maple syrup
1/2 tsp maple flavoring
2 whole large eggs (room temp)
1 large egg yolks (room temp)
chopped candied bacon – 2-4 slices
Topping
1/4 C butter
1/4 lbs brown sugar
pinch salt
1/4 C maple syrup
1/2 tsp vanilla
1 C chopped pecans
10 slices bacon chopped
1/4 C cream
Instructions

Preheat the oven to 375
Crust
mix all the crust ingredients and toss lightly with fork until well blended.
Press firmly into the bottom of a 9 inch spring form pan.
Bake on the bottom rack until crisp and golden, 12-15 min.
Let cool.
Cheesecake
Reduce oven to 300 and place baking dish full of hot water on the bottom rack to create moisture (leave this in while baking).
Cake
Beat cheese and sugar on med until light and fluffy, about 30-60 sec.
Add the vanilla, maple flavoring and maple syrup
Scrape the bowl, beat 45 sec more – make sure it’s smooth with no chunks.
Add the eggs and yolks and pulse until they are incorporated and the batter is velvety, about 30 sec – do NOT overbeat.
Pour the filling over crust, sprinkle on chopped bacon and barely blend
bake on the center rack until golden, about 45 -50 mins.
When you open the rack and shift the pan the center 6 inches will jiggle more than the rest, like a loose jello jiggler. This is the trick to learn, you might slightly undercook (not bad) or slightly overcook (okay) the first time as you get used to this style.
Turn the oven off and crack open the door and let the cake cool
Topping
melt the butter and brown sugar and bring to a boil
add the maple syrup and bring to a boil again
add the cream and stir until totally incorporated, add the vanilla, bacon and nuts
pour over the cooled cheesecake and then refrigerate overnight, cheesecake tastes better after a day or two in the fridge.

Serbian Honey Hearts Dessert- with yoyomax12

Here is the recipe she sent me in her words from her email!
(with a couple of notes from me)

Emi writes:
” Hello! I have wrote you about this treat called honey hearts. It is truly simple and gets more delicious as the time passes. So, here is the recipe, I truly hope you will make it into a video.

BATTER
-Milk 1 and 1/2 cups (add a bit more if mix is not liquidy, almost like crepe batter)
-Sugar (granulated, white) 1 and 1/2 cups
-Flour (regular) 2 and 1/2 cups
-Baking soda 1 teaspoon
-Apple spice mix, or pumpkin spice mix, (or just plane cinnamon, or anything with lots of cinnamon) 1 tablespoon

FILLING
-Apricot confiture(yoyomax12 **NOTE Jam or Jelly) (or any other as desired) around 1 cup, but add as much as you like or need to cover the baked 1st half

TOPPING
– Chocolate of choice (dark or milk, or mix of both), around 7 ounces (200 grams)

PREPARATION
Mix the batter in a large bowl, then divide in 2 equal portions. Bake the first half in 18×30 cm ( Yoyomax12**NOTE I used an 8″x10″ baking dish) deep square baking pan, which was lightly greased. Bake at 180 degrees Celsius (don’t know how much that is on F) (Yoyomax12 **NOTE 350F) for around 20 minutes, or until the cake feels firm and toothpick inserted in the center comes out clean and dry and the top is pale or golden. Take out of oven, spread the apricot jam immediately and cover with the second half of liquid batter. Bake for 20 more minutes, or until toothpick comes out clean and dry, but do not stick it all the way through, just through the top layer. After baking, leave in the pan to cool completely and cover it with melted chocolate. Leave in a fridge for an hour or so, then remove and cut rectangles while still in the pan. Keep in fridge or in room temperature, they are still good after a week.
Store Bought taste almost exactly the same as homemade. In true fashion, you could cut out hearts of finished cake, and then dunking them whole in the chocolate and refrigerate and serve. ”

**NOTES
When I make this again, I will use less apricot jam, probably 1/2 to a 3/4 as I found it a bit too sweet and overpowering. My husband loves them as is 🙂

Betty’s One Minute Fruit Salad



Betty demonstrates how to make One Minute Fruit Salad. This salad contains three canned fruits of your choice, plus a canned fruit pie filling – so quick and easy!

One Minute Fruit Salad

20-ounce can pineapple chunks, drained
11-ounce can mandarin orange segments, drained
14.5-ounce can sliced peaches
20-ounce can cherry pie filling

Mix all together in a large serving bowl. Cover with plastic wrap and chill until serving time. This may be used as a salad or as a dessert. Enjoy! –Betty 🙂
