Dulce de leche adds the perfect amount of sweetness to this fruity, tropical cheesecake.

INGREDIENTS

•1 cup chocolate cookies
•⅔ cup butter (16 tablespoons)
•7 ounces dulce de leche
•⅓ cup sugar
•½ cup cream
•⅓ cup grated coconut
•2 bananas
•1 tablespoon gelatin
•3-4 tablespoons water
•12 ounces Cream cheese
•1 ¾ cup dulce de leche
•1 banana

LET’S GET COOKING…

1.For the base:
2.Process the cookies with the melted butter.
3.Form the base on a mold or ring.
4.For the filling: In a bowl, beat the cream cheese with Dulce de leche, the sugar, the cream and the grated coconut.
5.Then add the crushed bananas and the gelatin while stirring constantly.
6.Pour the mixture onto the base and refrigerate.
7.Freeze for 2 hours and refrigerate for 5.

3 INGREDIENT PEANUT BUTTER FUDGE
1 cup coconut butter
2/3 cup peanut butter
3-4 Tbsp maple syrup, honey, etc.

1. Add all three ingredients to a double boiler. Heat for 4-5 minutes, stirring constantly, or until completely melted together.
2. Line a small glass baking dish with foil and pour the mixture into it. Drop the container on the counter a few times to smooth out the top of the fudge.
3. Refrigerate for 2 hours or until set. Turn container over and tap to release the fudge. Slice and enjoy.
4. Store in fridge.

I’m mildly obsessed with caramels – I have dozens of caramel recipes – pies, brownies, cakes, cookies, etc… I mean seriously! it’s just so good! this is my go to caramels recipe that I make for neighbors every year! enjoy!!!

BUTTERY CARAMEL RECIPE
printable recipe –
1 1/2 C butter
1 1/2 lbs brown sugar
1/4 tsp salt
1 1/2 C Karo light corn syrup
14 oz can sweetened condensed milk
1 1/2 tsp vanilla
In a large saucepan dissolve the brown sugar and salt in the butter over medium heat.
Add the Karo syrup and mix
Pour the sweetened condensed milk in and stir.
Boil the mixture over medium heat until it hits 240 degrees F on a candy thermometer (remember candy temperatures are listed as sea level degree’s so adjust according to your altitude – for example I lower all temperatures by 21 degrees F because I live so high up)
take it off the heat right away
Add the vanilla and stir
Pour into a prepared large jelly roll pan (sprayed with baking spray) OR into some water bottle silicone ice trays and let it set
I put it into the fridge for 30 mins or freezer for 10 to harden it up a bit to make cutting easier
Cut with a knife also sprayed with baking spray
wrap in wax paper squares and leave out – they will be soft and gooey and AMAZING!

FOOLPROOF CHEESECAKE RECIPE | DARK CHOCOLATE CHEESECAKE

We’re in the Christmas mood over at the Hungry Elephant and one of the big desserts around the holiday season is CHEESECAKE. So we made this delicious dark chocolate cheesecake! It was pretttty yummy, I can’t lie.. and I’m not even a huge fan of the dessert!

In all honesty – this recipe was SUPPOSE to be truffles.. I found a great recipe online but definitely did NOT read the reviews! It did not turn out like truffles at all! Too smooth, you couldn’t form the balls at all! So instead, I added a little more icing sugar and some cocoa to make it a chocolate cheesecake.

What you’ll need:

1 brick cream cheese
1 tsp vanilla
1/4 cup softened butter
3/4 icing sugar
1/4 cup cocoa
graham crackers (to top)
1 graham cracker pie crust
This cocoa powder cheesecake is super simple to make. The first thing you’ll want to do is, with a mixer, beat the cream cheese, vanilla and butter in a large bowl. Slowly add in the icing sugar as you mix. After that, add in the cocoa! Mix again.

Pour that baby into your graham cracker crust, cover with seran wrap and refrigerate until serving time! Top with graham crackers if you like or whipped cream!
