Quick Meal For Those Who Work, Beef Stew Pie



This is a quick and easy way to make a meal from leftovers.

Here’s the recipe:
Preheat oven to 425 degrees
Filling:
Leftover beef from beef stew or a roast, about 8 ounces
with a little of the gravy and some of the vegetables
3/4 cup of cooked rice
Fresh parsley if you have it or other spices

1 Pillsbury refrigerated unbaked pie crust

Mix filling and place on 1/2 of the pie crust, seal edges securely.
Make vent holes in top of crust for the steam to escape.

Bake on a lightly greased pan in a preheated oven at 425 degrees
for 30 minutes. Allow to cool on pan for about 5 minutes.

This pie was served with a green pea and cucumber salad on a bed of organic baby greens using Zesty Italian dressing and a strawberry Jello desert.

Strawberry Chiffon Pie
GRAHAM CRACKER CRUMB CRUST
1 PINT STRAWBERRIES
3/4 SUGAR
3 TBSP. STRAWBERRY GELATIN
3/4 CUP COLD WATER
1 TBSP. LEMON JUICE
1/8 TSP. SALT
2 EGG WHITES
Reserve 3 whole strawberries for garnish. Slice the rest of the strawberries in thin slices and toss in 1/2 cup sugar. Place strawberries in the microwave for 2 minutes to melt sugar. In liquid measuring cup place the gelatin in cold water. Let is sit for 3 minutes and then add lemon juice, salt and remaining ¼ cup sugar. Place in the microwave on high and heat (but do not bring to a boil). About 1.5 minutes. Combine with strawberries and mix well. If there is any remaining sugar crystals, put in microwave until they have melted on 30 second intervals. Mix well and place in a pie plate. Put in refrigerator until it forms a gel.
Egg Whites: Beat egg whites until stiff peaks form. In a large bowl fold, the beaten egg whites into the gelatin and place in crust. Cut the 3 strawberries in half and place on the pie for garnish. Keep chilled in the refrigerator.

Indian Samosa Pie

Servings – 2 – 3

INGREDIENTS
All purpose flour – 300 grams
Wheat flour – 150 grams
Salt – 1/2 teaspoon
Oil – 50 milliliters
Water – 250 milliliters
Oil – 45 milliliters
Mustard seeds – 1 teaspoon
Garlic – 1 tablespoon
Ginger – 1 teaspoon
Onions – 100 grams
Carrots – 70 grams
Green peas – 150 grams
Chilli flakes – 1/4 teaspoon
Cumin powder – 1/2 teaspoon
Curry powder – 1 teaspoon
Salt – 1 1/2 teaspoons
Sugar – 2 teaspoons
Boiled mashed potatoes – 750 grams
Soy milk – for brushing

PREPARATION
1. In a mixing bowl, add 300 grams all purpose flour, 150 grams wheat flour, 1/2 teaspoon salt, 50 milliliters oil, 250 milliliters water and knead it into a smooth soft dough.
2. Wrap the dough in a plastic wrap. Rest the dough for 20 – 30 minutes.
3. Roll out half of the dough into a 12-inch circle, roughly 1/8-inch thick. Gently fold the pastry in half and transfer to a 9-inch pie plate. Do not stretch the dough, but carefully press the round into the dish so that the sides are lined and you have some overlap. Trim excess dough so that about 1/2-inch remains to make up the crust.
4. Heat 45 milliliters oil in a pot, add 1 teaspoon mustard seeds, 1 tablespoon garlic, 1 teaspoon ginger and saute for 2 – 3 minutes.
5. Add 100 grams onions and fry till translucent.
6. Then, add 70 grams carrots, 150 grams green peas and mix it well. Cook for 5 – 7 minutes.
7. Now, add 1/4 teaspoon chilli flakes, 1/2 teaspoon cumin powder, 1 teaspoon curry powder, 1 1/2 teaspoons salt, 2 teaspoons sugar and mix it well.
8. Add 750 grams boiled mashed potatoes and mix it well. Cook for another 3 – 5 minutes.
9. Prick some holes in the dough with a fork.
10. Transfer the filling to the lined pie plate, spreading the mixture out evenly.
11. Roll out the second round of dough and place on top of the pie. Press together the bottom and top layers of the pastry and trim off any excess. Fold the top layer of dough over and under the bottom layer, press firmly together and flute the edges.
12. Brush it with soy milk. Cut 4 to 5 slits into the top of the pastry.
13. Preheat the oven to 350°F/180°C. Bake for 20 – 30 minutes or until the top of the pie is golden brown.
14. Cut it into slices.
15. Serve.

Nancy’s Homemade Doughnut Sticks and Hot Cocoa | Food Network



Nancy’s doughnut sticks are perfect for dipping in homemade hot chocolate.

Homemade Hot Chocolate with Old-Fashioned Doughnut Sticks

Ingredients

8 cups whole milk
16 ounces semisweet chocolate, chopped small or chips
1/4 cup sugar
6 cinnamon sticks
1 teaspoon vanilla extract
Old-Fashioned Doughnut Sticks, recipe follows

Doughnuts:
Nonstick spray, for pan
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
1 egg, lightly beaten
1/2 teaspoon pure vanilla extract
3 tablespoons unsalted butter, melted

Glaze:
2 cups confectioners’ sugar
2 to 3 tablespoons milk, more as needed

Directions

Special equipment: two 6-well eclair pans

Bring the milk, chocolate, sugar, cinnamon and vanilla extract to a simmer in a medium saucepan. Whisk until completely melted and smooth.

Serve with the Old-Fashioned Doughnut Sticks.

Glaze:
For the dougnuts: Preheat the oven to 375 degrees F. Spray two 6-well eclair pans with nonstick spray.

In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon and salt to combine. Add the milk, egg, vanilla and butter, and mix gently until combined.

Fill the wells of the prepared eclair pans about halfway with the batter.

Bake until the doughnuts spring back when touched and a toothpick comes out clean, 10 minutes. Transfer the pans to a rack set over a baking sheet; let cool for 3 to 5 minutes. Remove the doughnuts from the pans and let cool completely on the rack.

For the glaze: Whisk the confectioners’ sugar and milk together until smooth.

Dunk the doughnuts in the glaze to coat completely. Transfer to a rack and let set for 10 minutes before serving.
