Picnicky Chicken Salad (vegan!) #summersaladseries
Ingredients:
4 ounces of Butler Soy Curls
2 cups “chicken” flavored or vegetable stock
1 Pickle Spear chopped
1 Stalk of Celery chopped
1 small bunch Green Onions (green part only)
Dressing Ingredients:
1/2 cup or more Vegan Mayonnaise
1 Tablespoon Vinegar
1 Tablespoon Mustard
1/4 teaspoon Sea Salt
Pepper to Taste

  1. Yum! I used to make my chicken salad with cubed Granny Smith Apple. One of the few things I miss being vegan. Gotta try this!

  2. Not a vegan…but trying to be more plant based…so I had to get some of these soy curls….and holy s$&@ they are amazing!!! Totally amaze balls chickenless salad❤️❤️❤️❤️ totally going to experiment with these…had never heard of them so THANK YOU!!!

  3. Okay ladies, I made my version of the salad. I thought it turned out good …used bread & butter pickle pieces for a sweeter salad & also used another brand of chick'n bouillon cube called Not Chick'n Broth, but I wound up with a queasy tummy after a sandwich. I think it was the bouillon cube cause I noticed the broth had palm oil in the ingredients & was "greasy" feeling when squeezing off the soy curls. Bummer 'cause I have a whole container of the salad & now worried about trying to eat any more. Ugh! Good recipe idea, tho …thank you for sharing! I'll be on the look out for another no chick'n base to try again. Love & Big Hugs to you both! 🙂
