400g bread flour
1 tbsp kosher salt
1/2 tsp sugar
1 tsp active dry yeast
2 tbsp fresh rosemary, chopped
200g mild cheddar, cubed
200g cherry tomatoes, halved
3 tbsp grated parmesan
1 1/2 cups warm water (plus more if needed)
Olive oil for skillet
Combine flour, salt, sugar, and yeast. Add half rosemary, cheese, and water and mix until mostly formed and sticky.
Cover with a towel and allow to rise in a warm spot for at least 1 hour.
Spread olive oil in a cast iron skillet. Transfer dough to skillet. Sprinkle parmesan cheese, rosemary, and stud with tomatoes.
Cover and allow to rise for another 30 minutes.
Drizzle olive oil on top and bake at 375°F for 30 minutes or until golden brown and cooked in the center.
