Betty’s Festive Holiday Eggnog



Betty demonstrates how to make her Festive Holiday Eggnog. This is a drink that uses common ingredients that combine to give an uncommon taste! You’ll want to keep the ingredients on hand throughout the holiday season to treat your guests to luscious nutmeg-topped eggnog!

Note: In the video, I made only one-half of the recipe for demonstration purposes, but I am giving you the full recipe below, so you will note that all amounts have been doubled, and this makes a nice amount for a punch bowl.

Festive Holiday Eggnot

6 eggs
14 oz. can sweetened condensed milk
1 teaspoon vanilla extract
4 cups milk
1/2 pint heavy whipping cream (very cold)
salt, to taste
ground nutmeg, for sprinkling the top of the punch bowl or the top of individual servings
light rum, to taste (if desired)

In a large mixing bowl, beat 6 eggs. Mix in 14 oz. can sweetened condensed milk, 1 teaspoon vanilla extract, 4 cups milk, and salt, to taste. Beat ½ pint heavy whipping cream, until soft peaks form. Gently fold the whipped cream into the egg and milk mixture. Pour into a punch bowl. Sprinkle the top with nutmeg. Chill for at least 4 hours before serving. You may add light rum, if you want an alcoholic version of eggnog. You may also sprinkle the tops of the individual servings with additional nutmeg. This is a beautiful and tasty drink that you can have all year around, but it is very special during the holiday season. I hope you enjoy it! –Betty

2 oz. Vodka
2 oz. Grenadine
4 oz. Orange Juice
4 oz. Pineapple Juice

Betty’s Sun-Kissed Key Lime Pie



Betty demonstrates how to make her Sun-Kissed Key Lime Pie. It is made in a traditional fashion with key lime juice, eggs, and sweetened condensed milk. It is tart and tangy, but sweet and gorgeous!

Sun-Kissed Key Lime Pie

9-inch graham cracker crust
14 oz. can sweetened condensed milk
3 egg yolks—whites not needed
1/2 cup key lime juice (Use fresh squeezed yellow key limes or bottled key lime juice. Do not use green Persian limes for traditional Key Lime Pie.)

Combine 14 oz. can of sweetened condensed milk, 3 egg yolks, and 1/2 cup key lime juice. Blend until smooth. Pour filling into a 9-inch graham cracker crust, and bake at 350 degrees for 15 minutes. (If the crust is getting too brown, you may remove the pie from the oven after about 12 or 13 minutes.) Allow the baked pie to stand at room temperature for about 10 minutes or more before refrigerating. Chill in the refrigerator for at least two hours. When chilled, top with whipped topping, and garnish with fresh key lime slices. Cover with plastic wrap, and store in the refrigerator until ready to serve. (Make a tent of the plastic wrap, as described in Quick Tip 14, to protect the topping.) This is a quick and easy dessert to make, and is one that almost everyone loves! Its simple and inexpensive enough for everyday, but elegant enough for guests you want to impress!!!

INGREDIENTS IN THIS DISH:

250g Unsalted Butter (Melted)
1x 250g Packet of Plain Biscuits (Cookies)
3x 250g Packets of Cream Cheese
2x 395g Tins of Sweetened Condensed Milk
Juice of 2 Large Lemons (about 125ml)

Preperation Time: 5 – 10 minutes
Chilling Time: 2 – 3 Hours
