Crazy Impossible Coconut Pie Recipe ~ Super Easy Coconut Custard Pie

INGREDIENTS:
4 large eggs – room temp
1 cup granulated white sugar
1/4 tsp. salt
1/4 tsp baking powder
1/2 cup all purpose flour
2 cups whole milk
1/2 cup melted butter – room temp
2 tsp. pure vanilla extract or 1 tsp. vanilla and 1 tsp. coconut
1 1/4 cups shredded or flaked sweetened dried coconut
oil or butter to coat baking dish

Preheat oven 350 degrees F

Place all ingredients except the coconut into your blender or food processor.
Process until well combined.
Add coconut and pulse a couple times to combine.

Pour batter into a prepared pie pan (9-10″) and bake at 350F for 55-60 minutes or
until set and golden brown.

Can be served warm, at toom temperature or cold.
Enjoy.

  2. This looks so good…and a great pantry dessert! Sounds extra yummy with the chocolate sauce…will definitely be trying this! Years ago the impossible pies were so popular….kinda forgot about them. What’s nice about this recipe is that it doesn’t require bisquick. Thankyou so much for sharing!
