Banoffee pie is a British dessert staple! So how about trying a version that is a little easier on the stomach?! I hesitate to call this a healthy dessert, because that implicates that it tastes “meh,” which is the opposite of the truth! THIS DESSERT IS AMAZING. Seriously, I could eat it every day…and you have no idea that it’s dairy-free and refined sugar-free. (It’s also NEARLY gluten-free…spelt flour can be good for people with gluten intolerances, but if you have celiac disease, for example, you can’t have spelt flour…)
The reason it’s “free” of all these things is because Nicky Clinch, the woman who made the recipe, has food intolerances…but she had a craving for banoffee pie, so she made one that she could eat!! And boy oh boy, am I glad she did!
