Strawberry Rhubarb Pie with Michael’s Home Cooking



One of my favorite pies, I love Strawberry Rhubarb Pie!
Ingredients:
3 cups rhubarb
2 cups strawberries
1 and 1/4 cup sugar
1/4 cup tapicoa
1/4 teaspoon salt
1 egg for washing the top of the crust
sugar for dusting the top crust

Bake 425F for 10 minutes and then turn down heat to 350F and bake 40 minutes longer.

Betty’s Special Request Pineapple-Cherry Dessert



Betty responds to a request from a viewer for a simple-to-make fruit dessert. Ta-da! Introducing Betty’s Special Request Pineapple-Cherry Dessert! It’s *easy*–but it is also dramatic and luscious. it works for everyone!

Special Request Pineapple-Cherry Dessert

20 oz. can cherry pie filling (I used ‘No sugar added” for mine, but I decided “regular” would be better for a novice cook.)
8 oz. can crushed pineapple (Drain very well.)
1/2 of a 10.5 oz. bag of miniature marshmallows (More or less will be fine.)
8 oz. carton Cool Whip, thawed (I used the “lite” variety, but I think you should start with the “regular” variety before experimenting.)

Thaw the 8 oz. container of Cool Whip. Drain the 8 oz. can of crushed pineapple; do not use the pineapple juice for this recipe. Empty the 20 oz. can of cherry pie filling into a large mixing bowl. Add in the drained, crushed pineapple. Now, place about half of the 10.5 oz. bag on marshmallows on top, and stir these 3 ingredients together. When blended, gently fold in 8 oz. thawed Cool Whip. Transfer the finished dessert to a clear serving bowl if you have one. Serve immediately, or cover with plastic wrap and store in the refrigerator until ready to serve. It is a beautiful, great-tasting dessert that you can be proud to take to any dinner party! Enjoy!!!

Betty’s Scrumptious Puttin’ on the Ritz Pie



Betty prepares her Scrumptious Puttin’ on the Ritz Pie. It is easy and elegant, and the taste is heavenly!

Scrumptious Puttin’ on the Ritz Pie

3 egg whites, beaten stiff
1 cup white sugar
1 cup pecan pieces
2/3 of an inside tube of Ritz crackers, crushed finely
8 oz. carton whipped topping (thawed)
1 oz. unsweetened chocolate square
maraschino cherries (if desired, for garnish)

Blend the 3 stiffly beaten egg whites with 1 cup sugar, 1 cup pecan pieces, and 2/3 tube of finely crushed Ritz crackers. (You can place the 2/3 tube of crackers in a gallon-sized zip-lock plastic bag and go over it with a rolling pin until the crackers are crushed finely.) When this mixture is completely blended, pour part of it into a pie plate (which has been sprayed with cooking oil). Spread the mixture across the bottom and up the sides of the pie plate. Now, add the rest of the mixture and smooth until even across the top. Put the pie into a preheated oven at 325 degrees for 25 minutes. Remove from the oven and let cool to room temperature. (You may speed this up, using the refrigerator or freezer.) When the pie is cooled, spread as much whipped topping as desired over the top. Shave chocolate curls or slivers over the top evenly. Cut into pieces and top with a maraschino cherry, if desired. Heavenly!

Cherry Cheese Coffee Cake



2 pkgs. Pillsbury Crescent Rolls

1 pkg. cream cheese,
1/2 cup confectionary sugar,
1tsp. Vanilla
1 can cherry pie filling,
1 egg white, 1 tsp. sugar.

Roll out crescent rolls in a rectangle. Cut 1 inch strips all the way down both sides. You want to leave about 6 inches in the middle. Mix the cream cheese and sugar together and spread down the center. Spoon the Cherry Pie Filling over the top. If you use a fork you will not get all the juice. Fold the crescent rolls as in the video. Mix egg white and 1 tsp. sugar and paint on top of crescent rolls. Bake 350 25-30 minutes.
