Aunt Duddie Makes Hungry Hubby a Blueberry Pie

Not too hard to have a taste of summer in the middle of winter if you freeze your blueberries on a try, pop them in quart-sized zippy bags and stow them in the freezer. 6 cups of semi-defrosted and drained berries make a 9 or 10 inch deep dish pie. You’ll need pastry for a two crust pie. I used lard and butter in my pastry but if you want you can use shortening. Sprinkle the bottom crust with 1/4 cup of sugar to help prevent soggy crusts with berry pies. Mostly thaw the berries in a colander over the sink. Toss the berries with 1/2 cup of sugar, 1/4 cup cornstarch (up to 1/3 cup if your berries are juicy), pinch of salt, pinch of cinnamon, pinch of allspice, or use what you like, and the zest of a lemon. If you prefer to use regular clear jel you may want to add a few drops of blue food coloring and a couple of drops of red since Clear Jel tends to make fillings look anemic. Mix it up well and toss with the berries. Keep everything cold. Roll out your top crust and either lattice it or vent it or use a pie bird to help prevent boil overs. Trim and crimp and put in the fridge while you preheat the oven to 400* and bake the pie on the lower rack or even better, your pizza stone. After 30 minutes reduce the heat to 350 and bake 35 – 50 minutes more until the crust is golden brown. Cool for 4 hours before cutting. Make this in the morning and eat it for dessert after dinner. Hungry Hubby loves his pie. My motto is, “The Way To A Man’s Heart is Through His Pie Hole”. 😉

Betty’s Rich Pudding Fruit Salad

Betty demonstrates how to make a Rich Pudding Fruit Salad. This salad is made of canned and fresh fruit, and the dressing is a simple combination of the liquids from the canned fruits and a packaged pudding mix.

Rich Pudding Fruit Salad

15 ounce can sliced peaches, undrained
20 ounce can pineapple tidbits, undrained
2 cups fresh strawberries, quartered
2 cups fresh blueberries
2 cups seedless green grapes, halved
2 bananas, peeled and sliced
small box of instant vanilla (or other) pudding and pie filling mix (Use ½ of inner packet up to whole packet, depending on the amount of liquid the canned fruits have. I used cheesecake flavor; lemon flavor would also be good.)

Place all of the prepared fruits in a very large bowl. Do not drain the canned fruits. Sprinkle ½ packet to 1 whole packet of desired flavor of pudding and pie filling mix over top. Mix well. Cover with plastic wrap and refrigerate until serving time. YUM –Betty ♥♥♥

2 slice of butter or margarine (for best results, melt it)
1 small all purpose cream (optional)
1 small can of condensed milk

Nutella Cheesecake Recipe

One of the best cheesecake ever, Nutella Cheesecake with a really dark chocolaty crust with oreo cookies, a white cream cheese layer, a Nutella layer followed and in the end the intense Nutella topping which makes it totally irresistible. Give it a try my friends.


Makes about 12-16 servings

250 g (about 2 packages of 16 oreos each) oreo cookies, cream removed
6 tbsp (80 g) unsalted butter, melted

Cream Cheese Filling
35 oz (1 kg) cream cheese, room temperature
3/4 cup (175g) heavy cream + 2 tbsp, cold
2/3 cup (190g) Nutella
1 cup (200g) sugar
1 tbsp cornstarch
2 tsp vanilla extract
4 eggs, room temperature

Nutella Topping
2/3 cup (190g) Nutella
1/3 cup (80g) heavy cream


1. Prepare the crust. Preheat oven to 350 F (180C). Remove the cream between oreo cookies and crush them using a food processor. Melt butter and pour over the crushed cookies. Process until evenly moistened. Press cookie mixture with the back of the spoon into the bottom of a 10-inch (26 cm) springform pan (with a removable base). Bake for 13-15 minutes. Set aside to cool completely.

2. Reduce oven temperature to 300 F (150C).

3. Prepare the cream cheese filling. In a bowl combine the sugar with cornstarch.

4. In a large bowl beat the cream cheese with 3/4 cup heavy cream until well combined and the mixture seems fluffy as the heavy cream has whipped a bit. (This is very important, because this is what makes possible creating the 2 layers effect.) Gradually add the sugar mixture and mix until creamy and smooth. Add vanilla extract and mix again until well combined. Add eggs one at a time until each egg is incorporated.

5. Reserve about 1/3 of cream cheese mixture in a separate bowl. Add Nutella and 2 tbsp of heavy cream over the reserved 1/3 of cream cheese mixture and mix well until incorporated.

6. Pour the white cream cheese mixture over the prepared crust. Carefully add Nutella mixture on top and use a rubber spatula to spread evenly.

7. Bake for 45-55 minutes on 300F (150C). Turn off the heat and leave it another hour in the oven.

8. Remove and run a sharp knife completely around the inside edge of the pan. Let it cool completely at room temperature.

9. Prepare the Nutella topping. Bring cream to a boil and pour over the Nutella. Mix well and spread evenly over the cheesecake.

10. Cover and refrigerate overnight. Decorate with some chopped hazelnuts before serving if desired.

Serves 4-6

3 tbsp (45g) unsalted butter
½ cup (60 g) of flour
¼ tsp (1.75ml) salt
1 tbsp (12g) sugar
1 cup (240 ml) of milk
2 eggs
1 tsp (5 ml) vanilla
1 lemon
1 tbsp (7g) powdered sugar garnish

*Serve with fresh lemon wedges or Raspberry Jam

Preheat Oven to 400F (200C)

In a medium bowl whisk together the flour and the milk until smooth, then add the eggs, salt, sugar and vanilla. Whisk to combine and then set aside.

Place butter in an oven safe skillet, place skillet in the pre-heated oven. Watch pan closely and once butter is sizzling, pour batter into pan. Shut the door (do not open!) and allow pancake to bake for 16-18 mins.

Remove from oven, and dust with powdered sugar.

Cut into wedges and serve. With fresh lemon wedges (or raspberry jam)

First Lady of Arkansas, Susan Hutchinson’s, Apple Pie Recipe

2 cups flour
2/3 cup + 2 tablespoons shortening
3-4 tablespoons ice water

•Sift 2 cups of flour into a mixing bowl.
•Add shortening and criss cross with 2 table knifes until blended.
•Add ice water slowly until the mixture has the consistency of play dough.
•Using your hands, form a ball with the dough. Lay on a flat surface and roll out with rolling pin to flatten. Carefully lift dough and place in bottom of baking pie pan.
•Repeat this process for the top layer of crust for the pie and set aside.

Apple Pie
1 stick butter
3 tablespoons flour
½ cup brown sugar
½ cup sugar
2 tablespoons vanilla
Dash Tone’s® Cinnamon
8 Granny Smith® Apples

•Preheat oven to 350⁰F.
•Add butter to a skillet on medium heat and melt.
•Add flour, brown sugar, sugar, vanilla and cinnamon to the skillet and blend together. Remove from heat and allow to cool slightly.
•Slice apples and place in a bowl. Pour mixture over apples, coating each slice thoroughly. Pour into pie pan.
•Carefully lay top crust over the top of apples, making sure to pinch the bottom and top crusts together with your fingers. Pinch off any excess crust.
•Bake at 350⁰F for about 1 hour or until crust is golden brown.
