Makes 9 Blondie Sqaures

1 cup (240 g) butter
½ cup (100 g) white sugar
3/4 cup (135 g) brown sugar
2 eggs
1 tsp (5 ml) vanilla
1 3/4 (210 g) cups flour
½ tsp (2.5 ml) baking soda
1 tsp (5 ml)salt
½ cup (75 g) walnuts
1/4 cup (40 g) butterscotch chips

Preheat oven to 350F (176C).

Cream together the butter and sugars with an electric mixer until pale and fluffy, about 5-7 minutes.

Add eggs one at a time, scraping down the bowl between additions. Add vanilla. Beat to combine.

In a separate bowl whisk together the flour, baking soda, and salt. Whisk to combine.

Add flour mixture to butter mixture, in thirds, beating between each addition and scrapping down the bowl as needed.

Add butterscotch chips and walnuts and beat down the bowl as needed.

Transfer to a 9 x9 pan that has either been sprayed with baking spray, or lined with parchment paper.

Bake for 35 minutes until golden brown and set.

Allow to cool and then cut into 9 squares.

  6. i made these over the weekend, Beth … loved them. the family did too. i am curious … how can you make them even more butterscotchy? i did take into note you said the butterscotch chips are extra sweet, i wonder if i should have up-ped them, add more chips? i think it needs more? am i the only one? they were so moist & delicious. unlike any brownie i have ever tried.   7. You can find butterscotch chips at your local Walmart, and at first I thought I would have to order online lol! (If you have one but if not then you can look at your local grocery store)

  12. Hey Beth, I love your recipes and your videos are so lovely and easy to understand! But I have a small problem with this one – I use the exact amounts as instructed, however my butterscotch blondie seems a little too 'fat'. It leaves fatty stains on the plates and on the baking paper when stored. Is that okay, or does it mean that I'm doing something wrong (the butter is too warm when I start mixing?)? Thanks for your advice 🙂

  13. I follow the recipe and instructions, but mine turn out fluffy like a cake consistency instead of dense/fudgy like a brownie. Any suggestions as why mine turned out like this?

  14. We don't have butterscotch chips in Czech rep. That's for the first time I heard something like that. Sad!!
