You’ve made oatmeal in the microwave and you’ve probably made it on the stove top…but have you made it in the oven? Today we take your oatmeal game to the next level with this high protein oatmeal BAKED APPLE PIE!

Apple Mix:
2 Your Choice Apples

Filling:
2 Large Whole Eggs
8 Ounces Unsweetened Apple Sauce
1 Teaspoon Vanilla Extract
1/2 Teaspoon Ground Cinnamon
1 1/2 Cups (120g) Rolled Oats
2 Scoops Vanilla Protein Powder (I prefer 100% Whey or Lean Pro8)
1 Cup (8 Ounces) Unsweetened Almond Milk
2 Tablespoons Brown Sugar Substitute
3/4 Teaspoon Baking Powder
1/4 Teaspoon Salt

Calories in each serving (makes 4 BIG bowls):
Calories: 293
Fat: 7g
Saturated Fat: 2.2g

How to make:
1. Chop up your Apples
2. Lightly toss your Apple Mix around until your pieces are coated
3. Combine your Filling ingredients together in a bowl and mix until smooth
4. Add your Apple Mix into the bottom of a baking dish
5. Pour your Filling on top
6. Bake on 375F/190C for around 40 minutes

Tip:

Add anything on top that you want like some sugar free caramel!

Apple Pie

Yield: One 9″ pie; serves 8

Ingredients

Three 9″ Pie Crusts, Homemade or Store Bought (1 for bottom crust, 1 for lattice and 1 for decorations on top)
3 lbs Granny Smith Apples, cored, peeled and sliced (about 6-8 medium apples)
1/2 cup (1 stick/113g) unsalted butter, browned
1/4 cup all-purpose flour
2 tablespoons cornstarch
1/4 cup apple cider (not sparkling) or apple juice
1/2 cup granulated white sugar
1/2 cup packed dark brown sugar
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
2 teaspoons vanilla extract
egg wash: 1 egg beaten with 1 tablespoon milk or cream

Directions
Crust:
For the roses and leaves, roll out one pie dough about 1/8″ thick. Use a 2″ circle cutter to cut out 15 circles for your 6 roses (5 circles will make 2 roses). Overlap the 5 circles on top of each other and flatten the rounded edges. Roll them up all together and cut the roll in half, width wise, and place cut side down. Spread out the petals of the rose and repeat until you have 6 roses. Cut out leaves with small and large leaf cutters, using a knife to create the veins. For the lattice top, roll out your second pie dough about 1/4″ thick. Using a ruler and a knife, cut out 12 1/2″-wide strips of pie dough. Cover and set aside.

Press your last pie dough into the bottom and up the sides of a 9″ pie dish and place on top of a baking sheet, to catch any filling that bubbles over the edge during baking. Chill pie dish in the fridge while you prepare the filling.

Filling:
Preheat oven to 425 degrees F. Core, peel and slice your apples into 1/4-inch slices; set aside. Melt butter in a small saucepan over medium heat, whisking constantly, until the butter eventually bubbles, foams and then turns a light brown color, giving off a nutty aroma, about 5-10 minutes. Add flour, and cook for 1 minute, whisking to remove any lumps. Dissolve cornstarch into apple cider and stir into the butter/flour mixture. Stir in white sugar, brown sugar, cinnamon, nutmeg and salt. Bring to a boil and cook for 1 minute, stirring until thick.

Reduce heat and add vanilla and apple slices. Simmer for about 3-5 minutes, until apples have softened slightly. Let filling cool to room temperature (or store in the fridge for a few days, if making in advance).

Once filling has cooled, pour into prepared pie crust. Top filling with lattice pattern. Use a pastry brush to adhere the roses and leaves to top of lattice strips, with egg wash. Brush tops of entire crust and decorations with egg wash.

Bake at 425°F for 15 minutes. Remove from oven and tent the edges of the pie with aluminum foil if the edges from getting too brown. Reduce oven temperature to 350°F and bake an additional 35 to 45 minutes, or until the crust is golden, apples are tender and filling is hot and bubbling.

Cool for at least 3 hours at room temperature before serving, or refrigerate overnight, to allow filling to thicken. Serve warm, a la mode, with vanilla ice cream, if desired. Cover leftovers and refrigerate for up to 5 days; reheat for 10 minutes at 350°F.

In the Kitchen with Ruby: Drunken Cranberry Apple Sauce



A family favorite here at Muse Cottage, my drunken Cranberry Sauce…this version includes apples. Easy to make and beyond yummy!
How to Make it….
*1 small bag fresh cranberries
*1 large or 2 small apples
Juice of one lemon to squeeze over apples to prevent browning.
*1 to 1 1/2 cups of fluid depending on how much extra fruit you are adding. (I used mead and oj mix , but you can use wine, port, even brandy if you like)
* 1cup light or dark brown sugar, more if using an unsweetened liquid
* 1 to 2 tsp apple pie spice to taste
***********************************
Combine liquid and sugar and cook on medium to medium high stirring constantly to disolve…and bring to a slight boil. Add fruit and bring to a boil, lowering heat as it begins to boil…stirring constantly…***you CAN cook fluid down before adding fruit if you prefer by cooking for 5 minutes.***
Once fruit is added, cook until berries pop , typically 10 minutes…again stirring constantly as berries will burn easily!!!
Once fruit is tender take off heat and transfer to a heat safe bowl and allow to cool, sauce will thicken as it cools.
*store in the fridge tightly sealed after it cools, for up to a week. Also feezes nicely.

Apple Pie Latte | How to Make an Apple Spiced Latte!

Sick of pumpkin spiced lattes? Yea me neither. HOWEVER, why not switch it up now and then with an Apple Pie Latte?! After all, you can’t let fall go by without officially trying everything apple flavored. I love this apple pie latte so much because it really does taste like an apple pie! It has all the same sweet spices and flavors that an apple pie has minus the crust. But hey, I wont judge you if your crumble up some pie crust on top of the whipped cream. I accomplish the flavor using real apple! No fake apple syrup here, just pure thick apple butter. The more apple butter you add, the more apple pie’ish it tastes! Apple Pie Latte Recipe

Makes 1 Apple Pie Latte

| Ingredients |

1 Cup Freshly Brewed Strong Coffee
1 Cup Half & Half
2 Heaping Tablespoons Apple Butter
1 Tablespoon Sugar
1/2 Teaspoon Pumpkin Pie Spice
1/2 Teaspoon Vanilla
Whipped Cream for Topping

| Instructions |

Brew one hot cup of your favorite coffee.

In a small saucepan over medium heat, add half & half, apple butter, pumpkin spice, and sugar. Whisk together and heat until hot NOT simmering. **If you heat the half & half too much it WILL curdle!!!

In a coffee mug add coffee, apple butter creamer, and vanilla. Stir and top with whipped cream and dust with additional pumpkin spice or cinnamon.

Enjoy!!

TIP: Add ice, blend, and make a Apple Pie Frappucino!

ANOTHER TIP: Don’t use espresso to make this. Espresso tends to be highly acidic and when you add the acidity of the apple butter on top of it, it tends to make the milk or cream curdle.

THIRD TIP: Drink immediately. As it sits over time, the tiny particles of apple from the apple butter will accumulate on the bottom of the mug.

How to Make Pumpkin Pie Sangria | Recipe | Delish



This Pumpkin Pie Sangria will totally come in handy when you need to wind down from the stress that comes along with preparing a Thanksgiving feast. You (and your family) can thank us later.

INGREDIENTS

1 bottle white wine, chilled
1 bottle sparkling cider, chilled
1/2 c. pumpkin pie vodka
1 pear, chopped
1 apple, chopped
1/4 c. sugar
1/2 tsp. pumpkin spice
Cinnamon sticks, for garnish

DIRECTIONS

1. On a small shallow plate, combine sugar and pumpkin spice and mix to combine. Rim glasses with a piece of apple and dip glasses into mixture. Set aside.
2. In a large pitcher, combine wine with cider and pumpkin pie vodka. Add chopped fruit and stir to combine. Pour into glasses and garnish with a cinnamon stick.

Apple Cranberry Sangria | Recipes | Whole Foods Market 365



Apple Cranberry Sangria
Makes 8 servings

Sangria isn’t just for summer anymore. This fall version is crisp and refreshing, with the flavors of apple, cranberry and cinnamon to perfectly compliment your Thanksgiving table. Leave the skin on the apples for a colorful presentation. Make a double batch of the cranberry syrup and use it to lightly sweeten lemonade for your young guests.

½ cup sugar
1 ½ cups fresh or frozen cranberries, divided
1 cinnamon stick
1 (750-mL) bottle white wine
2 cups apple cider
1 cup bourbon
1 crisp apple, like gala or honey crisp, sliced

In a medium saucepan, combine sugar, 1 cup of the cranberries, ½ cup water and cinnamon stick, and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until cranberries burst, about 10 minutes. Remove from the heat, strain through a mesh sieve and set aside to cool.
In a large pitcher, combine white wine, apple cider and bourbon. Add apples and remaining ½ cup cranberries. Add reserved cranberry syrup and stir to blend. Cover and refrigerate overnight before serving.
