How to make Apple Cranberry Pie! (Episode-99)

Sweet and tart Cranberry Apple pie made in a skillet.

FILLING:
1 tablespoon butter
1 1/2 cups apple cider or pure apple juice
1/4 cup cornstarch
3/4 cup granulated sugar
1/4 cup loose pack brown sugar
1 tsp ground cinnamon
1/8 tsp ground nutmeg
Pinch ground allspice
1/2 tsp vanilla extract or vanilla bakers emulsion
2 TBSP spiced rum (optional)
4 medium apples, any variety peeled, cored and thinly sliced
2 cups fresh or frozen cranberries
dash of salt (omit if using salted butter)

Melt butter in large sauce pan or dutch oven over medium heat. Meanwhile, combine apple cider with cornstarch to make a slurry. Add to melted butter and stir constantly until it thickens. Add remainder of ingredients and cook until thick, about 7-10 mins. Stir frequently to prevent scorching. Smash some cranberries against the sides of the pot. When thickened, remove from heat and cool completely.

CRUST:
2 1/2 cups all-purpose flour
1/4 tsp kosher salt
1 cup cold butter, cut into cubes
6 TBSP ice water
2 TBSP distilled white vinegar

Combine flour, salt and butter cubes in bowl of a mixer, mix on low-medium until the butter is combined and mixture looks like small peas in the flour. Add the vinegar and water, one TBSP at a time until well combined. Remove from mixer bowl, shape into a ball, wrap in plastic and allow to rest at least 10 minutes. After it has rested spread the dough into a 9 or 10 inch cast iron skillet (use your hand). Make sure it goes up the sides to form a “bowl” to hold the filling. You may want to put a piece of parchment paper in the bottom to make a “handle” to easily remove the finished and cooled pie.

TOPPING:
1 cup packed light brown sugar
1 cup rolled oats or graham cracker crumbs
1/2 cup plus 2 TBSP all-purpose flour
1/2 cup butter, softened

Combine all topping ingredients until butter is incorporated well and mixture is crumbly.

Place filling into prepared crust, top with the topping and bake at 375 f for 35-45 mins. If desired, brush edges of crust with an egg wash to make it shiny. Let cool completely before removing from cast iron skillet.

OPTIONAL: Use a deep dish pie pan in place of cast iron skillet.
